Frozen Whole Silver Sand Smelt

Slim silver fish, heads and tails on, with a pointed snout, a small forward-set mouth and a faint golden line along the flank. Fine scales give the body a bright metallic sheen.

Small enough to cook whole and eat whole. Dust them in cornflour and fry until the tails crisp, grill them in a row on a hot plate, or simmer them into a stock.
