Fresh-Frozen Half Shell Scallops

Scallops on the half shell, white fan-shaped shells hinged open, each holding a plump round adductor muscle sitting on a crescent of bright orange roe.

The roe is the sweetest part and it is intact here. Steam them with garlic and vermicelli, grill them over coals with a little butter, or poach the meats out of the shell for pasta.
