Frozen Spicy Cooked Crawfish Tails

Crawfish tails only, heads removed, cooked in a spiced sauce until the shells turn deep red. Each tail is split along the back with the pale meat lifted clear, so the flesh is ready to pull straight out.

All the work is done — no head to pick through. Warm them in the sauce and eat them with your hands, or fold the meat through pasta, fried rice or a seafood boil.
