Frozen Sea Urchin Uni Shells

Whole sea urchins, split and cleaned, each shell packed with five bands of vivid orange roe. The spines are a deep purple-black, the roe a warm apricot with a soft, custard-like sheen.

Uni is eaten close to raw: spoon it straight from the shell over rice, fold it through pasta, or serve it on a chilled plate with a squeeze of lemon. Rich, briny and faintly sweet.
