Frozen Whole Red Snapper Fillets

A whole red snapper with its scaled scarlet skin, spiny dorsal fin and large eye, paired with thick boneless fillets cut from the same fish. The flesh is a clean pinkish white, firm enough to hold a clean edge.

Steam the whole fish with ginger and spring onion, or pan-sear the fillets skin-side down until the edges crisp. Mild, sweet and finely textured.
